Cape Bouteille

Wine blend

It is a blend of five complementary grape varieties: Cabernet Franc, Cabernet Sauvignon, Merlot, Syrah and a touch of Refošk. Vinified with precision and matured for a long time in new barrels, Cape reveals a remarkable balance between structure, aromatic expression and freshness, designed to accompany both fine dining and special occasions.

 

The Cabernet Franc (40%) brings finesse, tension and elegance. Cabernet Sauvignon (30%) adds structure with firm tannins and depth. The Merlot (12%) softens the whole with its supple texture and fruity notes. Syrah (15%) lifts the blend with spicy and floral nuances, while Refošk (3%) adds a lively, mineral touch, a tribute to the coastal terroir of Debeli Rtič. Already seductive in its youth, Cape 2022 has been designed to evolve harmoniously over the decades, with an ageing potential of over 20 years.

Winemaking

From the vineyards of Debeli Rtič, overlooking the Adriatic, Cape draws its strength from a terroir where vines were first planted in 1072. This place, steeped in history, offers a rare balance between fresh sea air and sunshine.

 

Each bunch of grapes is harvested by hand in 5 kg crates, then sorted optically, berry by berry, with the utmost care. Vinification is carried out separately, grape variety by grape variety, in small wooden containers, combining tradition and technological precision. After cold pre-fermentation maceration, alcoholic fermentation begins slowly. The wine then remains in contact with the skins for 45 days, giving way to full malolactic fermentation. The wine is matured in new barrels - initially for a year for each grape variety, then for a further two months after blending - before maturing for 18 months in the bottle to refine its expression.

Ageing potential

Cape is expected to keep for 20 years, or even longer in great vintages.
